Lunch. Yum Yum

We are still in the process of emptying our fridge and saving money. This Greek influenced sandwich is not a novel invention, but a really good reminder of how yummy being a vegetarian can be.... No PB&J for me!
Whole Wheat Pita (warmed), Mixed Greens, Cucumbers, Chopped Olives, Hummus, Sprinkled with Feta


Healthy, Filling, and Perfectly Yummy.

  1. I'm looking at this beautiful sandwich thinking that I would love it, and Robb would be completely grossed out. Hmmm... I have a question that maybe you could address (or possibly have already done so) in a blog post. Back when you met A, he was nowhere near being a pescetarian. How did he initially react to your feelings and insights about food? How did were you able to make the transition to a pescetarian household together? Have their been bumps along the road?

  2. Good idea! I'll prepare a post about that. It was alot easier than you would think. I am the one cooking, so in some ways he had no choice. However, we had lots of discussions about it, and I am lucky in how flexible he actually is.
